David's extensive experience in the global food industry is a testament to his versatility and adaptability. His journey began as a Commis Chef in some of the UK's most prestigious restaurants, including a One Star Michelin. Post university, he ventured into senior factory process and product development roles in the UK and China, lending his expertise to a diverse range of brands such as Marks and Spencer, Sainsbury's, Asda, Tesco, Morrision's Aldi and the Co-Op. In hospitality, David has been a trusted consultant for a wide array of brands, including Costa Coffee, Luckin Coffee, Starbucks, Nando's, Pizza Express, and Wagamama's. His academic achievements include a Bachelor of Science in Food Marketing from Sheffield Hallam University.

Naomi Matthews

Founder & Director

Naomi's career has been marked by her leadership in senior roles across three continents, including North America, Europe, and Australia. She has held senior trading positions with three of the world's largest retailers, Sobeys, Coles, and Woolworths Australia, with recent portfolio responsibilities reaching £1.25b. In manufacturing, Naomi has guided the commercial functions at the operating board level in UK Bakery manufacturing for customers such as M&S, Sainsbury's, Tesco, Co-Op, Aldi, Lidl, Amazon, Coles, Sobeys, and exports to the Middle East, Singapore, and Hong Kong. Most recently, Naomi held commercial director roles with Costa Coffee Ltd, a Coca-Cola company. Her academic background includes a Master's of Business Administration and a Bachelor of Business Administration.

Sarah Fielder

With over 20 years of experience in UK development, Sarah has established herself as one of the UK’s leading product developers and food trends experts. Her exceptional work has been recognised with prestigious awards, including the UK Sandwich Designer of the Year and numerous BBC Good Food awards. Sarah’s clients have included the major UK retailers M&S,Tesco, Sainsbury’s, Costco, Amazon, and leading brands such as Pernod Ricard, Nando’s, Seven Seas, McDonalds and Costa Coffee. Sarah's academic background is supported by a Bachelor of Science in Food and Consumer Marketing.

Working as consultants, we were part of the team that developed, validated, launched, and supplied key products for Nando's UK grocery offering. We worked on projects that covered Perinaise, Peri-Peri Sauce, and Nando's Chilli Jam. These offerings were sold in all the major UK multiples. We supported key activities across all grocery sales channels, helping to generate new cash for the Nando's organization.

McDonald's UK required support to develop a diverse range of hot beverages and menu items, from breakfast wraps to sweet snacks, French fries, Kid’s menu, chocolate brownies and a ring doughnut. This work also included introducing the first falafel for McDonald's, rebranded as the veggie patty. All developments were executed within operational constraints, considering restaurant and drive-thru implications, ensuring consistent quality and timely delivery in well-designed packaging.

A global leader in wines and spirits, encompassing 50+ markets, Pernod Ricard required an Innovation project consultant role to deliver a transformational step-up in Innovation. The function created and stabilised the new Regional Innovation Hub, in three key markets: Spain, the UK, and Germany and delivered strategic international brands across the whole region.

We built a robust development and launch process with key international partners in China, focusing on safety, quality, and standardisation. Products included breakfast bakery and lunch savoury offers. The new products allowed Western products to be manufactured in China to Western standards, generating a robust new sales stream for Starbucks Asia.
